The Cabernet Franc 2021 has a smooth rounded palate with a juicy centre, finishing with a mineral acid freshness. Tasting of fruity red berries and pronounced aromas of red cherry, wild raspberries and fresh cut herbs, this is a magnificent single vineyard example of a Hunter grown Cabernet Franc.

Tasting Notes

This wine tastes as good as it smells. In the spirit of a true Bordeaux Blend we have used Cabernet Sauvignon combined with C. Franc, both were aged in French & American oak independently. Perfect drinking now; pair with red-meat dishes, seasoned simply with salt & pepper. The true meaning of Bordeaux Blend is the combination of red grape varieties grown in Bordeaux, France. Cabernet Sauvignon is a compulsory  element in this wine followed closely by Merlot, as mentioned we used Cabernet Franc instead.

Tasting Notes

A crisp and pale straw-coloured wine with herbal notes. Fresh lemon and lime persist throughout balanced by an underlying steely acidity. This wine is true to the style of a classic Hunter Valley Sémillon demonstrating good length and structure. It has the citrus freshness of youth, but is developing those delicious notes of oak that typify an ageing Sémillon. But note this wine has not been oaked. 

If you are eating a food that you would squeeze a lemon over, pair the food with this very classy Sémillon.

Tasting Notes

Rarely do we produce a purely varietal estate-grown Cabernet Sauvignon. Due to its late-ripening tendency, this grape variety is sometimes a risk to grow successfully in the Hunter Valley.  In 2018 the weather was exceptionally dry so we managed to hold out to produce an intensely flavoured red that finishes well with prominent oak accents. This example is silky textured and combines well with light and medium red meats and creamy based dishes including seafood.
