2020 Flora Sparkling Shiraz

A very new addition to our cellar door. Old oak maturation and second fermentation on lees. 

A beautiful rich shade of rhubarb and plum, when poured a pinkish blush of bubbles settle around the edge of the glass. A rich and full, easy celebratory wine with a soft, slight flush of sweetness. 

PLEASE BE CAREFUL WHEN OPENING A COLD BOTTLE, THE TANNINS CAUSE THE POUR TO GUSH

The oak also increases the stability of the structure of the wine offering great potential for ageing longer in the bottle. The savouriness of this wine pairs well with fish, pork, chicken and so much more. I know because this wine type is my favourite.

Our Signature Rosé has an alluring soft rhubarb colour; it is dry in style and is made from what our winemaker calls a ‘field blend’ of Sangiovese and Cabernet Franc - all grown on our Hunter Valley property. It is lightly oaked and has flavours of strawberries and citrus, finishing with a toffee edge

Variety: Cabernet Franc, Cabernet Sauvignon

Tasting Notes

This wine tastes as good as it smells. In the spirit of a true Bordeaux Blend we have used Cabernet Sauvignon combined with C. Franc, both were aged in French & American oak independently. Perfect drinking now; pair with red-meat dishes, seasoned simply with salt & pepper. The true meaning of Bordeaux Blend is the combination of red grape varieties grown in Bordeaux, France. Cabernet Sauvignon is a compulsory  element in this wine followed closely by Merlot, as mentioned we used Cabernet Franc instead.

Tasting Notes

Rarely do we produce a purely varietal estate-grown Cabernet Sauvignon. Due to its late-ripening tendency, this grape variety is sometimes a risk to grow successfully in the Hunter Valley.  In 2018 the weather was exceptionally dry so we managed to hold out to produce an intensely flavoured red that finishes well with prominent oak accents. This example is silky textured and combines well with light and medium red meats and creamy based dishes including seafood.
